Avocado and shiitake tartare with wasabi mayonnaise, yuzu and fresh wasabi leaves

Ingredientes para 4 personas

 

Para la mayonesa de wasabi:

  • 200 ml de aceite de oliva virgen extra (suave)
  • 1 huevo
  • ½ cucharita de sal
  • 1 cucharita de zumo de yuzu o lima
  • 1 o 2 cucharadas de wasabi fresco rallado @yamaaoiwasabi

 

Veganesa:

  • 150 ml de leche de almendras
  • 300 ml de aceite
  • 30 ml de zumo de limón
  • sal al gusto

Se prepara como la anterior. Añadiendo el wasabi al final.
